My New Obsession: Cupcakes

For some reason, I’ve never baked cupcakes and actually decorated them with my own icing. I rather baked cookies, brownies, muffins, and small cakes.. But never cupcakes?! So I went all out this time. With a lot of recipe help from Brian, I made everything from scratch: the cake mix, and the french butter cream icing (which is waaaaaaay more difficult to make than it sounds). I failed twice! Either the butter was not room temperatur-ed enough, or the eggs were not in the perfect ribbon stage. Either the medley of corn syrup and sugar water was not in the perfect wet consistency, or the sugar syrup was not heated well enough and was not in the perfect soft ball stage. And if the ready icing is not properly plastic wrapped, it dries up making it impossible for you to decorate. Sounds difficult huh? Still craving cupcakes?
